Bought some extra tomatoes and preserving them with a vacuum sealer. Someone gave me this sealer and recently I started to store some fresh country grown vegetables in the freeze for winter cooking. Also used it on fresh boiled kale.
Seems to work pretty good. I read that vacuum sealing vegetables and freezing them extends there shelf life by 2 to 3 years. Usually I eat them within 6 months time. Tomatoes are great for crock pot cooking.
Often when rummaging through thrift-shops or garage sales you can find vacuum sealers for nothing. A new one costs around 150.00 dollars.
Vacuum sealing is a lot easier than canning if you are short on time.
