Apple pie with sorghum, honey, chia and buckwheat crust.

Ingredients
6 Apples peeled
1 Tbsp chia
1 Tbsp sorghum
1 Tbsp honey
1 pinch nutmeg
2 pinches cinnamon
½ cup buckwheat flour
1½ cups all purpose unbleached flour
⅔ cup crisco shortening
3 dabs of butter
Instructions:
Preheat oven to 400f.
Slice Apples and put in big bowl.
Add chia, sorghum, honey, nutmeg and cinnnamon to sliced apples and mix.
Mix flours with crisco shortening and add 6-7 Tbsp of cold water.
Roll one half of dough out on floured surface and fold in two. Other half is for top.
Place one piece of dough in bottom of greased pie pan and line with apples.
Add dabs of butter.
Place last piece of dough over top and pinch edges to seal.
Cut a simple design for decor.
Bake for around 1 hour until crust is light brown on top
Notes
Use extra dough to make a quick tart. Roll out dough and add apples, cinnamon and honey. Bake with pie.
